Abstract

Various kinds of plants have been used as medicinal plants since ancient times, considering that medical costs are not affordable for everyone, natural medicine with traditional medicinal plants is seen as an affordable alternative. Like the avocado. Avocado (Persea americana) can be used as medicine. Avocado fruit besides the flesh which has a high nutritional content, avocado seeds also have a high nutritional content. Research shows avocado seeds have greater properties because their antioxidant content can be up to 70%. The purpose of this study is to determine the nutritional content of flat bread with avocado seed flour substitution. This research was conducted at the Feed Laboratory of the Faculty of Animal Husbandry, Hassanuddin University, Makassar, South Sulawesi by using the experimental laboratory method or trial method. The results of the research included 39.45% water content, 1.66% ash content, 8.24% crude protein content, 0.43% fat content, 1.47% fiber content, and 233 ppm flavonoids content.
